Honey Citrus Soy Salmon


For me, the secret to eating light is lots of flavor. This is one of my favorite, FLAVORFUL ways to prepare salmon. I usually serve this with Lemon Rice and steamed Green Beans. If I'm being extra calorie/carb conscious then I'll eat mine over a bed of arugula tossed with balsamic vinegar.

Ingredients:
  • 4 salmon fillets, about 6 ounces each, skin on
  • 4 tablespoons honey
  • 2 tablespoons Balsamic Vinegar
  • 2 tablespoons fresh lime juice
  • 1/4 cup orange juice
  • 2 tablespoons soy sauce
  • 1 tablespoon crushed garlic
  • Sea salt and freshly ground black pepper
Directions:
Whisk honey, vinegar, lime juice, orange juice, soy sauce and crushed garlic until mixed well (emulsified).

In a large airtight recloseable (ziploc) bag, carefully place the salmon and marinade.
Marinate in fridge for 1 hour
Be careful to not overmarinate, as you still want to primarily taste the salmon.

Spray a 9x13x2-inch baking pan with cooking spray

Heat oven to 400°.
Remove salmon from marinade and place, skin-side down, in the prepared baking pan
Season with salt and pepper
Cover with foil
Bake for 12 to 15 minutes, or until fish flakes easily with a fork
