This is a recipe from my childhood and one of my favorite comfort foods. We get a large head of broccoli in our CSA box this week - so this will be on next week's menu plan for sure!
Ingredients
2 medium brown onions, chopped
4 TBSP butter
32 ounces Chicken Broth
6 cups whole milk
32 ounces Velveeta cheese, cubed
2 lb bag of frozen broccoli
1 lb egg noodles, cooked al dente
Directions
In a large stock pot melt the butter and saute the onion until tender.
Add the chicken broth and milk and heat over low flame until hot.
Add the cubed Velveeta a little at a time. Stirring after each addition, helping the cheese to melt and blend with the broth.
Once all the cheese has been added, add the broccoli and noodles.
Cook over a low flame for 20 minutes.
Ladle into bowls and ENJOY!
