Menu Plan Monday and Strawberry Lime Mojitos

This past weekend, my next door neighbor Cathy and I, both had husbands who were out of town. So Saturday night, we got together for dinner and Strawberry Lime Mojitos while our 6 kids (plus another neighbor girl who was here for a sleep over) played crazy and gobbled up mac & cheese. As I walked her home at 10pm, with her littlest babe on my hip and a smile in my heart, I couldn't help but think about how blessed I am with Cathy's closeness. Both physical and emotional - having her near is so fun and so special!

Here's my recipe for the mojitos. I had made Limeade (from frozen concentrate) for the kids and added strawberries to their cups. So I thought the easiest and fastest way to make our mojitos was to use the same mixture for our "adult" drinks too. The result was super easy and yummy! I wish I had better pictures...but in the midst feediing and entertaining 7 kids, Instagram is as good as it gets!






Strawberry Lime Mojitos
makes 1


Ingredients
3 strawberries, trimmed and cut in half
5-6 fresh mint leaves
juice from the half of 1 lime
1 Tablespoon sugar
crushed ice
equal parts light rum, limeade and club soda (i used about 2 ounces of each)
lime wedges, mint & strawberries for garnish

Directions
Place strawberries, mint, lime juice and sugar in the bottom of glass.
Using the back of a spoon, mash together until all the ingredients are well macerated.
Add crushed iced to almost fill glass.
Top with equal parts limeade, rum and club soda.
Stir and garnish.
Sip and smile!

Monday - Chicken lettuce wraps with steamed rice and edamame
Tuesday - Broccoli cheese soup and tomato cheese bread
Wednesday - French dips with cornflake cheesy potatoes
Thursday - White chicken enchiladas with spanish rice and beans - taking dinner to our friends who just had a baby =)
Friday - Leftovers or Takeout - Daddy's in the kitchen cause I'm headed to Julie's for Anika's Craft Night. I'm taking Salted Caramel Mason Jar Cheesecakes to share. I might try a lemon raspberry version too...if it works, I'll blog the recipe next week!
Saturday - Date Night = Eat Chow and Hangover 2!
Sunday - Chicken lime burgers with corn on the cob and Margarita popsicles. Hello Memorial Day!
