I keep thinking that "after this week" things will slow down. But that never seems to be the case! It's been a whirlwind of blog conferences, wedding and baby showers, family birthdays, holidays, surf competitions, picture days, book club,Gala prep...oh yes, and some normal everyday school and daycare duties in there too!
This week is no different. BUSY beyond belief, but all good, fun things! Namely, the Glass Slipper Gala is Saturday. An event almost a year in the making for us ladies in the guild. It has been a labor of love and I can't wait to see it all come together, benefit the hospital, and celebrate children. An excuse to get gussied up and dance with my husband is always welcomed too!
The kids and I went shopping Saturday for a dress for me to wear. (YES, three kids in a dressing room as I try on formals!) The girls loved every minute and Wyatt was a very good sport - but it was challenging to say the least. Happily...I ended up with two dresses! I'm leaning towards the purple (cause I love the earrings I got to go with) but the girls want me to wear the blush. And I really like the blush too...so I think it might have to be a game day decision. Or maybe I'll be really brave and pull an "Andrea" later this week to get YOUR opinion!

I have officially mastered how to cook for a tadpole.
Molly was honored at Flag Deck on Friday for being
an "Overall Excellent Student!"
Megan rocked her oral report on the Statue of Liberty!
And at the dinner table last night, we all dubbed the day "perfect."
I guess if life can't slow down, at least it helps to focus on and appreciate how blessed we are. With each other, our health, a home, beautiful weather right now, good friends, fun family time, and a dinner table. (We ate at our outdoor one every night this weekend!) Each night over dinner, we go around the table and say our "Favorite Thing" of the day. I always seem to come back with "right now." Because the dinner table - who's around it, what's on it, the time shared at it - is always my favorite. Here's what will be on ours this week:
Monday: Steak salad with goat cheese and rosemary parmesan toast with tomatoes
Tuesday: Open faced Mahi Mahi burgers with lime mayo, sweet potato fries and fresh pineapple
Wednesday: Egg white scramble Florentine with fresh canteloupe. Kids will have pancakes and scrambled eggs this night as Florentine is not their thing! ;-) I'm also making 7 Layer Dream Bars for Teacher Appreciation gifts tomorrow!
Thursday: Cinco de Mayo! Tomatillo turkey taco salad and cheddar quesadillas for Mateo & the kids. I'm going to Book Club and taking Cowboy Caviar (I add 2 diced avocados too) with blue corn tortilla chips. We are discussing THIS.
Friday: White Salmon alla Checca with chessy orzo and grilled zucchini
Saturday: GALA!!!
Sunday: Mother's Day - I have no idea what we will end up doing!...but my perfect day would include a run, a veggie & brie sandwich from C'est Si Bon by the pool with my kids, and time with my Momma. I see us ending with a barbeque where I make THIS CAKE. Yummmmmm.
Notes: Mahi Mahi burger patties and sweet potato fries are both from Trader Joe's. Before baking the fries, I sprinkle them with olive oil, kosher salt, ground red pepper, cumin and a bit of cinnamon. SO YUMMY! The White Salmon alla Checca is also from Trader Joe's. I add a can of artichoke hearts (drained) and a TBSP of capers to the sauce when I'm warming it.
