Turkey Taco Salad

I like to make this salad with ground turkey. Jennie O makes some that is already "taco" seasoned. It cooks up really nice and is super lean. Of course, you can also use ground beef, seasoned with taco seasoning or not. Whatever you prefer. I also like to put the meat on last, after I have tossed all the other ingredients with the dressing. That way the warm meat doesn't wilt the rest of the salad and still keeps is spicy flavor!

I love this meal because everyone in the house enjoys it. I make some cheddar quesadillas for the kids and they each pick out their favorites from the salad. Corn for Megan, Avocado for Molly, and the Black Beans for Wyatt. Everyone is happy!

Ingredients

2 ripe tomatoes, diced
1 bunch of cilantro, chopped
2 green onions, diced
1 can of black beans, drained
1 cup frozen corn, defrosted
1 yellow pepper, diced
1 avocado, seeded and diced
1/2 pound sharp Cheddar, grated
1 head iceberg lettuce, washed, drained and shredded
1 pound lean ground turkey, browned, crumbled and drained
1/2 cup salsa
1/2 cup sour cream
Tortilla chips and black olives to garnish

Directions
Combine the iceburg, tomatoes, cilantro, green onions, yellow pepper, black beans, corn, cheese, and avocado in a large bowl.
Mix together the salsa with the sour cream to make dressing.
Toss salad with dressing and plate.
Top with ground turkey, tortilla chips and black olives.
