Irish Car Bomb Cupcakes

When I was creating my fabric menus for St. Patrick's Day, I wanted another dessert to accompany the Rhubarb Pie. I decided to make the "greenest" cupcakes I could think of! What is more Irish than stout, whiskey and cream? Wrapped up in a cupcake? YUM. 

Irish Car Bomb Cupcakes
makes 24 large, or a whole lotta minis

1 German Chocolate cake mix
1 1/4 cup Guinness (or other stout beer)
1/3 cup vegetable oil
3 eggs

3.5 oz bittersweet chocolate
1/3 cup heavy cream
1 TBSP butter
1 tsp Jameson Irish whiskey
1/2 tsp vanilla extract

3 cups powdered sugar
1 cup butter (at room temperature)
1/4 cup Baileys Irish Cream liquor

Preheat oven to 350 degrees and fill muffin tin with cupcake liners.
In a bowl, prepare the cake mix according to box directions.
Just replace water with beer!
Fill tins about 3/4 full

Bake for 15-17 minutes
Remove from oven and allow to cool completely
While cupcakes are cooling, make the Ganache

In a small saucepan, gently heat cream on the stovetop
Add chocolate and let sit for a few moments.
Stir gently until chocolate is melted and combined with the cream
Mix in butter, vanilla, and Jamesons
Remove from heat and allow to cool until semi-solid
Spoon into a pastry or plastic bag
While Ganache is cooling, make the frosting

Mix all ingredients with an electic mixer until well combined
Spoon into a pastry bag or plastic bag and chill until ready to use.

Time to assemble the cupcakes!
After the cupcakes have cooled, use a small spoon or melon baller to scoop out the centers
Fill the hollow with the ganache

Pipe icing onto the top and ENJOY!
Try and keep yourself from eating them all right on the spot.
Be sure and share to avoid a cupcake hangover ;-)

*It would be good to note, that these do contain alcohol that is not cooked off, in both the ganache and the frosting, so they are best saved for adults only!*

Hi! Just found your blog from another blogger and I have to make these cupcakes. My husband thinks it'll be too strong but I must prove him wrong!!

I made these cupcakes last Friday and they turned out super yummy!!! Everyone loved them.

My only problem was with the ganache. I let it sit to get semi-solid but the liquid just separated from it. Still tasted fine but wasn't sure if that was normal.
